White Chicken Chilli

INGREDIENTS

  • 1 teaspoon olive oil

  • 2 medium onion, chopped

  • 2 garlic cloves, minced

  • 2 (4 ounce) cans chopped mild green chilies

  • 2 teaspoons cumin

  • 2 teaspoons dried oregano

  • 1/4 teaspoon cayenne pepper

  • 3 (16 ounce) can great northern beans, drained

  • 6 cups ( about 3 cans ) canned chicken broth

  • 4 cups chopped cooked chicken,I use about 4 chicken breasts.

    DIRECTIONS

    heat oil in large pot over medium heat.

  • add onion and sauce until translucent, about 5 minutes

  • stir in garlic, then chillies, cumin, oregano and cayenne and salute for 2 minutes

  • add undrained beans and stock bring to boil

  • reduce heat

  • add chicken and cheese to chili

  • Stir in cheese melts

  • season to taste with salt & pepper

    • Then add garlic, cook for 1 minute.

    • Add the cubed chicken cook for 5 minutes.

    • Then add all the rest of the indgredients,stir.

    • Cook for 15 minutes, on low heat.
