Grandma’s Clam Chowder

Grandma’s Clam Chowder

Servings 10 cups

Ingredients
  

  • ¼ lb Salt pork (it’s near the bacon ) or bacon diced
  • 2 pcs medium onions sliced
  • 3 doz Hard- Shell Clams, shucked with liquid. I used 2 cans of full clams and drained clams save liquid
  • 2 tbsp all purpose flour
  • 3 pcs large potatoes pealed and diced (3 cups)
  • 2 tsp salt
  • ¼ tsp celery salt
  • ¼ tsp pepper
  • 3 cups milk (I use almond milk)

Instructions
 

  • In large sauce pan or dutch oven, over medium heat, cook salt pork or bacon until lightly browned: add onions and cook till tender about 5 mins
  • Stir flour into onion mixture until well blended.
  • In large measuring cup add clam juice from clams. Set aside clams. Add enough water to clam juice to make 2 cups.
  • Gradually stir in clam liquid mixture ( NOT Clams) and cook, stirring constantly, until mixture is slightly thickened.
  • Stir in potatoes, celery salt, salt, & pepper.
  • Cover and cook until potatoes are tender, about 10 minutes.
  • Ad clams, milk, and butter or margarine.
  • Cover and cook until heated through, about 5 minutes. Stirring often.
