The Jennifer Aniston Salad
Ingredients
- 3.5 Cups cooked bulgur wheat ( I used Qunioa )
- 2-3 chopped mini cucumber
- ½ cup chopped parsley
- ½ cup chopped mint
- ⅓ cup chopped red onion
- 2 cups chopped pistachios
- 2 cups chickpeas
- Juice of 1 lemon
- ¼ cup extra virgin olive oil
- Salt & pepper
- 1/2 cup crumbled feta (optional, I did not use)
Instructions
- Combine all ingredients and mix everything together, Enjoy!! My measurements are in notes.

How I made it:
