The Jennifer Aniston Salad

Course Salad, Side Dish

Ingredients
  

  • 3.5 Cups cooked bulgur wheat ( I used Qunioa )
  • 2-3 chopped mini cucumber
  • ½ cup chopped parsley
  • ½ cup chopped mint
  • cup chopped red onion
  • 2 cups chopped pistachios
  • 2 cups chickpeas
  • Juice of 1 lemon
  • ¼ cup extra virgin olive oil
  • Salt & pepper
  • 1/2 cup crumbled feta (optional, I did not use)

Instructions
 

  • Combine all ingredients and mix everything together, Enjoy!! My measurements are in notes.

Notes

How I made it:
3/4 cups cooked quinoa
2 chopped mini cucumber
1/2 cup chopped parsley
1/2 cup chopped mint
1/3 cup chopped red onion
1/4 cup chopped pistachios
3/4 cups chickpeas
Juice of 1 lemon
2 tsp extra virgin olive oil
Salt & pepper
1/2 cup crumbled feta (I did not use)
Portion control 
1/ 1/3 Green 1 Blue, 1 Red, 2 tsp
If you add the cheese add another blue container 
Gut Protocol 
1/ 1/3 Green, 1 Blue, 1 Red-B, 2 tsp
