Vegetable Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium  Onion chopped
  • cloves Garlic minced
  • 2 medium Carrots, sliced
  • ½ cup Green beans
  • ½ Cabbage finely chopped
  • ½ Bell pepper chopped
  • 1 can (14.5 ounces) low sodium diced tomatoes (with juice)
  • 6 cups Low sodium beef broth
  • 2 Bay leaves
  • ½ teaspoon dried ground Thyme
  • ½ teaspoon Basil
  • 1 medium zucchini chopped
  • 1 cup Broccoli chopped
  • pepper to taste

Instructions
 

  • 1. Heat oil in large stockpot over medium-high heat.
  • 2. In a large pot cook onion, garlic, carrots, beans and cabbage over medium heat until slightly softened.
  • 3. Stir in bell peppers, undrained tomatoes, broth, bay leaves and seasonings. 
  • 4. Simmer 6-7 minutes.
  • 5. Add in zucchini, broccoli and simmer an additional 10 minutes.
    Remove bay leaves before serving.
