Vegetable Soup
Ingredients
- 1 tbsp olive oil
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 2 medium Carrots, sliced
- ½ cup Green beans
- ½ Cabbage finely chopped
- ½ Bell pepper chopped
- 1 can (14.5 ounces) low sodium diced tomatoes (with juice)
- 6 cups Low sodium beef broth
- 2 Bay leaves
- ½ teaspoon dried ground Thyme
- ½ teaspoon Basil
- 1 medium zucchini chopped
- 1 cup Broccoli chopped
- pepper to taste
Instructions
- 1. Heat oil in large stockpot over medium-high heat.
- 2. In a large pot cook onion, garlic, carrots, beans and cabbage over medium heat until slightly softened.
- 3. Stir in bell peppers, undrained tomatoes, broth, bay leaves and seasonings.
- 4. Simmer 6-7 minutes.
- 5. Add in zucchini, broccoli and simmer an additional 10 minutes. Remove bay leaves before serving.
