1pound Sweet potatoes peeled and chopped into 3/4-inch dice (about 2 medium)( I like to use left over roasted Sweet potatoes)
½ Red bell peppers cored and ½-inch diced
1mediumGreen onion chopped
1handfulSpinach or kale
½ tsp Cumin
½ tspPaprika
Salt & Ground black pepper
¾cup Eggs whites
Instructions
1. Heat oil in large pan over medium-high heat. Add Sweet potatoes, peppers, and green onions. Cook for 3-5 minutes, stirring occasionally, until the potatoes are tender. 2. Add spinach and spices, stirring to combine. 3. Add egg whites, stirring until cooked.Enjoy!
